Alligator Bites

Years ago when Jalapeno Poppers were very popular I tried one & I didn’t care for the cream cheese and Jalapeno mixture & I decided to recreate the recipe with a Cajun twist. So one day I put this recipe together & it was a huge hit for all of my friends and family. It is so much better than a typical Jalapeno Popper with the cream cheese mixture.

Ingredients:

Jalapenos
Seasonings
Country Boy Sausage or your favorite sausage
Bacon
Mozzarella cheese

Directions:

Wash in hot water & prepare as many Jalapenos as you want by cutting them in half, leaving the stems on and then scraping and discarding most of the seeds and white pith but leaving enough to keep the BITE. The more seeds and pith you leave the hotter the BITE!
Place all Jalapeno halves side by side in a large metal baking tray or pan with the inside facing up.
Generously sprinkle your favorite Cajun Seasoning into the Jalapenos: We recommend Heaven Made Products: Amazin Cajun , Amazin Flamin Cajun, Amazin MexiCajun or Amazin Blazin Cajun Seasoning because these seasoning are less salty and more flavorful than any other Cajun Seasonings.
Depending on how many Jalapenos you are cooking you’ll need enough Country Boy Pork Sausage which can be purchased at Wal Mart. I split each sausage down the middle long ways then again and then I cut those 4 pieces in half and depending on how long the Jalapenos are I’ll cut the sausage to fit inside the jalapeno half and after I have several little cut off pieces available I’ll use several of those for one jalapeno.
Next I’ll take some Hickory smoked bacon. I’ll cut the package of bacon in four pieces and separate those into a piece per jalapeno and just set it on top.
Place the pan in a 450 degree preheated oven for about 20 minuets or until bacon is cooked. drain the grease into a heat proof bowl and save drippings to put over some rice, Yum! Yum!
Place a slice of Mozzarella cheese over each bacon topped jalapeno or sprinkle lots of shredded Mozzarella cheese over all of the Jalapenos and bake for an additional 5 minuets or until all cheese is melted, it doesn’t hurt if you allow the cheese to start to bubble and brown a little.
Remove from oven and allow to cool for just a little while then dig in and enjoy. Yum! Yum! Yum! Yum! Yum!
Alligator Bites with ““No Teeth”” Gums only!
Same recipe as above but scrape the insides of the jalapeno’s throughly leaving no seeds or white pith.
