Cookies While You Sleep

This is a perfect gluten-free, meringue cookie recipe that requires minimal effort. Our family loves to enjoy during Passover!

Ingredients:

  • 3 extra large egg whites
  • Pinch of salt
  • 3/4 cup plus 2 tablespoons sugar
  • 1 1/4 cup mini chocolate chips

Directions:

  1. Preheat oven to 375 degrees.
  2. Beat egg whites until frothy.
  3. Add a pinch of salt and slowly add sugar.
  4. Beat for several minutes, until very stiff and glossy (should look like marshmallow fluff).
  5. Gently fold in 1 cup chocolate chips and drop by the tablespoon onto a cookie sheet lined with parchment paper.
  6. If desired, sprinkle a few of the remaining chips on tops of cookies, or on just half of the cookies for contrast.
  7. Place in oven on middle rack and turn the oven off immediately. Leave door closed until morning.

The recipe makes about 28 cookies.
