For many years my husband. Russ, participated in jail ministries through our local church. . He taught many classes to men who would be getting out of jail soon, teaching them things like how to handle finances, marriage, and other valuable things to know when integrating back into society. At the end of his classes the men who completed the course would get a certificate. And there was a party to celebrate. That always included ice cream and my Hawaiian Wedding Cake. The men wrote me many letters of thanks for this cake, even asking for the recipe to send home to their wives or mothers. Soon the cake became known as the jail cake. It’s an easy cake to make. You just throw all the ingredients together.

Ingredients:
CAKE:
2 C flour
2 C sugar
2 eggs
2 tsp. Baking soda
1 C chopped pecans
1 C Coconut
1 20 Oz can crushed pineapple with juice
ICING:
1 8 OZ CREAM CHEESE
2 1/2 C Powdered sugar
1/2 C softened butter
2 tsp. Vanilla
Directions:
Cake: Mix all ingredients together. Pour into a greased 9" x13" pan. Bake at 350 degrees for 35 minutes.
Icing: Blend all icing ingredients and spread on cooled cake.
