My mom always made Potato Soup and Cornbread when I was younger. I tried Olive Gardens soup which had potato, kale and sausage, and decided to experiment with my own. I won a local recipe contest around 2005.

Ingredients:
- 2 lbs. Ground Italian Sausage
- 5 lbs. Potatoes, cut into 1-inch pieces
- 2 boxes Chicken Broth
- 2 cups water
- 1 onion, chopped
- 1 Tablespoon Butter
- 1 Tablespoon chopped Garlic
- 1 teaspoon Italian Seasoning
- Salt & Pepper to taste
- 2 teaspoons Red Pepper Flakes (optional)
- 3 Cups Kale, chopped
- 1 Quart Half 'n Half
Directions:
- Brown Italian Sausage
- Add potatoes
- Add water and chicken broth
- Salt and pepper
- When potatoes are almost softened, add already sauteed onion, butter, garlic, kale, and Italian Seasoning.
- When kale is softened, turn heat to warm and stir in Half 'n Half.
Cooking soup at high heat will cause milk to clump.
Great with parmesan cheese and French bread.
