Millie's Cajun Red Kidney Beans

My family of nine had red beans and rice on wash day, usually Monday. This is based on my mother’s recipe. I still cook this delicious high protein meal every week!

Ingredients:

  • 1 Lb. Camilla Red Kidney Beans
  • 12 oz. Homes Smoke House Pecan Smoked Sausage
  • Kroger Frozen Cajun Style Mirepoix Blend (celery, onion, green pepper)
  • 1 tablespoon of garlic
  • 1 large Bay Leaf
  • 8 to 10 cups water
  • Salt and pepper to taste

Directions:

  • Rinse and sort beans.
  • Cut sausage into small pieces.
  • Saute Mirepoix blend and garlic in vegetable oil.
  • Add beans.
  • Add water.
  • Add sausage.
  • Add Bay Leaf.
  • Add salt and pepper.
  • Cook over medium fire in covered pot for 3 hours or until done.
  • Smash 4 or 5 tablespoons of beans and return to pot.
  • Serve over rice.
