My family of nine had red beans and rice on wash day, usually Monday. This is based on my mother’s recipe. I still cook this delicious high protein meal every week!

Ingredients:
- 1 Lb. Camilla Red Kidney Beans
- 12 oz. Homes Smoke House Pecan Smoked Sausage
- Kroger Frozen Cajun Style Mirepoix Blend (celery, onion, green pepper)
- 1 tablespoon of garlic
- 1 large Bay Leaf
- 8 to 10 cups water
- Salt and pepper to taste
Directions:
- Rinse and sort beans.
- Cut sausage into small pieces.
- Saute Mirepoix blend and garlic in vegetable oil.
- Add beans.
- Add water.
- Add sausage.
- Add Bay Leaf.
- Add salt and pepper.
- Cook over medium fire in covered pot for 3 hours or until done.
- Smash 4 or 5 tablespoons of beans and return to pot.
- Serve over rice.
