Years ago my mother had me on a diet & served me some sweet peas for dinner, they were warmed and right out of the can & I hated them. So I created this version so I could follow my diet and they are wonderful. Years later I had numerous church people over for dinner at my home. Before we all ate I made an announcement of what I was serving & I mentioned Sweet Peas, well two people spoke up saying “I don’t eat sweet peas!”. I replied back, “If you come to my house to eat, you will at least try everything I have cooked”. So the two people fixed their plate & put a tiny amount of Sweet Peas on their plates then tasted them. They both went back for more & at the end of the night when leaving both of them asked if they could bring some home with them, they were fighting for the leftovers. These sweet peas are delicious!

Ingredients:
4 cans of Le SUEUR very young sweet peas
1 medium to large onion cut up into small diced pieces
1 stick unsalted butter
1-2 teaspoons of freshly cracked black pepper, you can use more if you like. I do.
2 or more tablespoons of dark brown sugar, sweeten to your liking
1 tablespoon of Heaven Made Products: It’s Incredible, add more if you like
8 ounces of any of the following: Tasso, Andouille, Chunks of bacon from a pack of bacon ends and pieces or regular bacon cut into small 1/2 inch strips cutting across the strips of bacon. You can add more and you can certainly do a combination of several of these. My preference is Andouille for my peas and bacon for my corn.
Directions:
Open up the cans of sweet peas and drain the water and set aside. Remove the butter from the paper wrapper and place in a 4 quart pot and place on high, once the butter is melted put the meat in and cook for about 3 minutes and then add in the onions and cook at a medium saute until the onions stat to brown a little.
Dump in the sweet peas, pepper, seasoning and brown sugar and cook on high for about 5 minutes. Taste and adjust to your liking.
This recipe is not an exact measurement recipe, I never measure when I cook but this is close. Make it your recipe, adjust any of the ingredients to make it how you like. But what I have above is going to be very good. It is important that you use freshly cracked black pepper. You can find black pepper with a grinder at Sam’s Warehouse or Costo’s at a very reasonable price, those are the best ones to get. The black pepper just enhances this dish. You can serve this dish as a side dish or serve it as a main dish serving it over freshly cooked Jasmine Rice, but add in more meat depending on how many people are being served. When I was growing up in Louisiana we ate peas over rice all of the time, just plain, I eventually added black pepper and some salt to make it edible and then moved on to adding other things until I got to the recipe above which people love. I have had people come over to my house to eat and tell me that “Don’t put any Peas on their plate” I responded by telling them “You at least have to try them” and once they did they wanted to bring some home.
