Sopapilla Cheesecake

Sopapilla Cheesecake captured my attention years ago because Cheesecake is always a favorite dessert, but time consuming. The prep is not a lot of steps and best of all fail proof. It’s a comfort dessert for family, a great crowd pleaser at gatherings, or Family Reunions. I always get ask for the recipe, so what more reason than to share with Cotton Patch Community Cookbook. Try it and see how delicious this simpler version satisfies your taste buds for a much quicker dessert.

Ingredients:

2 (8-ounce) cans refrigerated crescent roll dough
2 (8-ounce) packages cream cheese, softened
1 1/4 cups white sugar, divided
1 teaspoon vanilla extract
1/2 cup margarine, melted
1 teaspoon ground cinnamon

Directions:

Step 1 -Preheat the oven to 350° degrees
Step 2 -Grease a 9x13-inch baking pan.
Step 3 -Unroll one can of the crescent roll dough and press it into the bottom of the prepared pan.
Step 4 -In a medium bowl, add the cream cheese, 1 cup of the sugar, and the vanilla and mix or beat with an electric hand mixer until smooth and creamy.
Step 5 -Spread the cream cheese mixture over the crescent roll dough layer.
Step 6 -Unroll the second can of crescent roll dough and lay the dough on top of the cream cheese mixture layer without pressing it down.
Step 7 -Pour the melted margarine over the dough.
Step 8 -In a small bowl, add the remaining 1/4 cup sugar and the cinnamon and stir to combine.
Step 9 -Sprinkle the cinnamon-sugar on top of the melted margarine.
Step 10 -Bake until the top of the dough is crisp and golden, about 25-30 minutes.
Step 11 -Allow the squares to cool slightly.
Step 12 -Slice and serve.
